Bramble Clafoutis

Clafoutis is a French dessert from the Limousin region. We love the custard/flan-like, yet light texture. It is a perfect way to use up your ripe bramble in the back garden. Plus, it is super easy to make! We submitted this for Guardian's Readers' Recipe Swap: Ripe, only to see a whole feature on Cherry Clafoutis by Fecility Cloake a day later! INGREDIENTS

250g bramble, or any berries of your choice

1 tbsp icing sugar

50g ground almonds

35g plain flour

100g caster sugar

0.5 tsp vanilla extract

2 eggs

2 egg yolks

250 ml double cream

DIRECTION

1. Per-heat oven to 180 degrees Celsius.

2. Soak the bramble / berries in a bowl of water with icing sugar for 10 minutes, drain and set aside.

3. Mix the ground almonds, plain flour, castor sugar, vanilla extract, eggs, egg yolks and double cream until smooth.

4. Place the fruits in a greased baking tray, and pour over the mixture. Bake for 20-25 minutes until golden.

5. Serve with extra berry sauce and/or ice cream while still warm.
